Sunday – Slow Cooker Lasagna. Aaaah. Such a wonderful cold weather recipe. It takes a little up front work and then you can just let it cook all afternoon. I don’t deviate from the recipe other than using ground turkey in place of the beef. Serve with garlic bread and a big salad. Delicious!
Monday– Garlic Chicken. Easy. Easy. Easy. This recipe is only 5 ingredients and takes about 30 minutes to cook. If I have the time, I love to serve this with garlic mashed potatoes. You can’t have too much garlic, can you??
Tuesday– Panko Crusted Salmon. Ok. Trying to eat more fish so this week you will see two fish recipes. This one is delish and crazy easy. If you don’t have an oven-proof skillet, just transfer to a ceramic or glass baking dish and put in the oven for the last portion. The boys love salmon and buttered noodles so that’s usually the side I make.
Wednesday– Chicken and Bean Burrito Verde. Love love love this recipe from Ellie Kreiger. To simplify for a midweek meal, pick up a cooked rotisserie chicken from your grocery deli. I also am not a huge fan of cilantro, so I omit that and usually don’t add the jalapeno pepper. I like jalapeno but I seem to always forget it at the store and the recipe still tastes great. Serve with Spanish rice and black beans for a perfect meal!
Thursday– Pork Chops Stuffed with Feta and Spinach. This isn’t the best mid-week recipe BUT you can prepare the night before to save time. It is fabulous and worth the preparation.
Friday–Baked Tilapia. This recipe is a recipe from the Deen Brothers. As in Paula Deen’s adorable sons. I love this recipe because it keeps it simple. You don’t need to do a ton to Tilapia. There are only 5 ingredients in this recipe and cooks in less than 20 minutes. Simple. Quick. Delicious. What more could you ask for in a mid-week meal?? Serve with Jasmine rice or sometimes I like to do red beans and rice to add a burst of flavor to the meal.
