Sunday – Pecan Crusted Salmon , Easy Zucchini Parmesan and Jasmine Rice. A MUST try menu. Seriously, the salmon is soooo delicious. If you love salmon, you will love this recipe. Trust me. The zucchini parmesan is one of the easiest side dishes you can make. Super healthy. Low cal. Tastes delicious.
Monday–Tomato Sausage and Ziti Pasta. This recipe calls for an obscure pasta. I just use ziti. Serve with garlic bread and a salad.
Tuesday– Fastest-Ever Enchiladas. I make this recipe even faster by using salsa from the refrigerated section of the store. Although now that I have a garden, I’m thinking I may take the time to make fresh salsa. I typically serve with Zatarain’s Black Beans and Rice.
Wednesday– Grilled Mozzarella Sandwiches. Serve with a side of marinara sauce or Roasted Red Pepper soup (you can find this soup at Trader Joes or Aldi’s). Yum. Salad would go well with this too.
Thursday–Black Beans and Pork Chops. Wow. All I can say is wow. Crazy easy and really good. I like to serve this with rice (brown or white).
Friday–Speedy Mini Meatloaves. Serve with mashed potatoes and corn for the ultimate in comfort food. I really love doing mini meatloaves for the fam. I put smoked cheese in the center of the ‘grown up’ ones and I leave the sauce off the top of the ‘kid-friendly’ ones.
Saturday-‘take a break from all this cooking’ night. Order food. Take the fam to dinner. Eat a bowl of cereal. 🙂 Make PB and J’s. Easy is the theme for tonight.
